- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 cups cheddar cheese, shredded (shred a little extra cheese for the top)
- Preheat the oven to 425F.
- In a large bowl, mix together flour, baking soda and salt. After dry ingredients are stirred together add shredded cheese so it is coated with the flour mixture.
- Make a well in the centre of the flour mixture, add the buttermilk and mix until a sticky dough forms.
- Lightly flour a work surface and tip the dough onto it.
- Gently roll and fold the dough a couple of times to bring the mixture together. Do not knead.
- Shape the dough into a ball and place on onto baking sheet lined with parchment paper or silicone tray. Cut the dough with a deep X, cutting almost all the way through dividing it into quarters. Dust the bread with flour, add extra cheese to the top if desired.
- Bake for 20-30 minutes.
- The loaf should be golden-brown, if you tap the bottom it will sound slightly hollow.
- Leave to cool on a wire rack. ENJOY!
