Leifsa – Isaacson

2 cups mashed potatoes

1/2 cup butter (1 stick)

1/2 cup light cream

1 tsp salt

1/2 cup flour

 

Mix all ingredients into a stiff dough and make balls the size of an ice cream scoop.  Roll out as thin as possible on a well floured surface.  To cook use a hot griddle and get a good brown on both sides.
